Thai green curry, literally "sweet-green curry" is a Central Thai variety of curry. Due of the green chilies that give the dish its color, curry is sometimes known as "green" curry. The word "sweet" in the Thai name, "wan," relates to the specific shade of green rather than the flavor of the curry. Since this is a Thai curry made with fresh green chilies and coconut milk, the hue is a light, creamy green that is also known as "sweet green" in Thai.
Its components aren't quite set in stone. The curry tends to be more pungent than the gentler red curries, even if it can vary in spiciness. It is not always sweeter than other Thai curries. Between 1908 and 1926, under the reign of King Rama VI or Rama VII, green curry saw significant development.
RECIPE PROPER
This particular curry paste is very versatile. You can actually create more than a dozen types of dish from it such as chicken, seafood, tofu, meat, meatballs, etc. just to name a few. In this particular recipe, we are going to make an authentic chicken dish. However, I do not have much of the spices available in the local market, and I do not have the proper mortar and pestle to grind and mix all the spices needed to make the green curry paste. And so that is why I just bought the canned version and added some coconut milk to enhance the flavor. The result was very excellent though. I just had a wonderful time serving the dish and eating dinner with my family that night. So come on and join me… Let’s cook this dish together!
GREEN CURRY CHICKEN, THAI DISH RECIPE
WRITTEN RECIPE:
Serves 4-5 persons
Cooking time: 45 min
Cuisine: Thai, Asian

LIST OF INGREDIENTS:
1kg. Chicken drummets
125 gms. Bamboo shoot
Fish Sauce
1 can Green curry sauce (or paste) with kafir leaves
1 Can Coconut milk
Ground black pepper
Ginger
Lemon grass
½ med Red bell pepper (stringed)
½ med White Onion sliced
3 pcs Green Chili Pepper sliced
Sugar
Salt
Cooking Oil
Water
COOKING INSTRUCTIONS
1ST STEP: PRESSURE COOKING
Sauté chicken in a pressure cooker using onion and ginger;
Add a dash of salt and pepper;
Add 10 cups of water;
Upon boiling, remove scams by using a skimmer;
Add some lemongrass;
Close the lid and pressure cook for 10 min;
After 10 min, let pressure release first before opening the lid.
2nd STEP: SIMMERING
Get a separate cooking pan and turn stove to med heat;
Add 1 can coconut milk;
Add 1 can green curry sauce with kafir leaves;
Add lemon grass;
Add all the pressure cooked tenderized chicken drummets;
Add 1 tsp brown sugar;
Add green chili peppers;
Add bamboo shoots;
Add red bell peppers;
Add fish sauce;
Cover and simmer for three minutes;
Conduct taste test;
Add sweet basil;
Cover and simmer for 1 min;
Serve while it’s hot. (Best served with white steamed rice)
