WHAT IS KIMCHI?
Traditional Korean “banchan” or sidedish known as kimchi is made up of salty, fermented vegetables, most often napa cabbage or Korean radish. Gochugaru (Korean chili powder), spring onions, garlic, ginger, and jeotgal (salted fish), among other ingredients, are among the many that are utilized. Various soups and stews also contain kimchi. A cornerstone of Korean cooking, kimchi is served as a side dish with practically all meals.
WHAT IS KIMCHI FRIED RICE?
Kimchi fried rice, also known as kimchi bokkeumbap in Korean, is a simple meal comprised mostly of leftover rice and kimchi. Kimchi fried rice is a favorite if there doesn't appear to be anything to eat at home because Korean houses usually always contain these two essentials. In addition to kimchi and rice, kimchi fried rice can also be cooked using other readily accessible ingredients such chopped veggies or meats like spam or sausage.
TIPS FOR CHOOSING THE BEST RICE
One excellent method to use up some of your leftover steamed rice is to make kimchi fried rice. You've likely heard that rice that is one or two days old fries better. Let me explain this in more detail. Freshly steamed rice is usually wet and tender, but when it is stir-fried, it can become gluggy, which is unpleasant in a stir-fry meal! However, you may also use freshly steamed rice if you can control the water quantity adequately. Just purposely add less water to the rice while steaming it to make it drier.

TYPICAL INGREDIENTS
Kimchi fried rice can include a wide variety of items in addition to kimchi and rice. The most typical meats are pork or spam, but you may also use beef, chicken, bacon, ham, canned tuna, or shrimp. If mushrooms are substituted for the meat, the dish's name may be prefixed with the name of the item, such as "beoseot-kimchi-bokkeum-bap.
For vegans, you may use tofu instead of meat or simply omit it. You may also use the vegan type of kimchi and skip the egg.
OUR VERSION
In our version, we used chicken sausage instead, to be included in the dish to enhance the flavor. For kimchi, we use the napa cabbage kimchi and chopped it into small sizes. Since this is not the vegan type, we tend to put a sunny side up fried egg on top and sprinkled some green onions as garnishing.

KIMCHI FRIED RICE
WRITTEN RECIPE:
Serves 2 to 3 persons
Cooking time: 20 min
Cuisine: Korean/Asian

LIST OF INGREDIENTS
2 Tbsp. Butter or Margarine
3 cloves Garlic (finely chopped)
½ med. Onion (finely chopped)
3 pcs. Small sized Chicken Sausges (diced 1.2cm)
100 gms. Napa cabbage Kimchi (sliced or chopped)
3 cups Left over steamed rice
Green Onions (finely chopped) for garnishing
Sea salt
Sesame oil
COOOKING INSTRUCTIONS:
Prepare the cooking pan and turn on the stove to medium heat;
Put the butter to melt in heat;
Add up the garlic and wait to become golden brown;
Add the onions;
Add the sausages; stir fry and sauté;
Add the kimchi
Put the left over rice and mix well with the sautéed vegetable and sausage;
Stir fry until Kimchi is evenly distributed to absorb and create an orange hue rice;
Add a few sprinkle of Sesame oil;
Spread up some green onion for garnishing;
Add some salt;
On a separate frying pan, fry the egg, sunny side up style;
Put the Kimchi fried rice on the serving plate and put the egg on top;
Add some more green onions to garnish up;
Serve while it’s steaning hot.
