WHAT IS CHICKEN tropicale?
A fruity sweet aroma that is tasty and creamy at the same time, I would like to introduce 'Chicken Tropicale''. Slightly similar to our local delicacy called "Chicken Hamonado" for it's mild sweetness and another favorite "Pininyahang Manok" for it's creaminess, both of which includes pineapple as their main ingredient. That's why a consider this as a FIlipino fusion dish.
THE TWIST
The twist is that, I added two more fruits to join the lonely pineapple. Now I can name the dish "tropicale", a unique trio of pineapple, banana and coconut, all tropical island fruits.
MY PERSONALIZED HISTORY OF THIS DISH
I am not quite sure if this dish has been done by others locally, or perhaps in the tropical islands of the pacific, but I just thought of doing this at the time that I do not really have any idea what to cook. It so happened that all the ingredients in this recipe were the only ones available in the fridge and our kitchen pantry. And so, voila, Chicken Tropicale was born.

CHICKEN TROPICALE
WRITTEN RECIPE
Serves 3 to 4 persons
Cooking time: 1 Hour
Cuisine: Filipino, Fusion
Course: Main Dish
list of ingredients
3 tbsp. Soy sauce
3 tbsp. Vinegar or as desired
Pineapple chunks (quantity as desired)
3 tbsp Coconut cream
2 pcs. medium potatoes (peeled and diced 1 inch)
1/2 kg Boneless chicken thighs
1 pc Med onion sliced
3 cloves Garlic minced
Banana blossoms (qty as desired)
Black pepper corn (qty as desired)
Sugar (qty as desired)
Salt (a pinch)
Ground black pepper (a dash)
Cooking oil for sautéing
COOKING INSTRUCTIONS
1ST STEP - SAUTEING
Saute the chicken in cooking oil, onion and garlic (half only);
Add a dash of pepper and salt;
Add soy sauce;
Add black pepper corn;
Add vinegar;
2ND STEP - INITIAL SIMMERING
Cover and simmer for 4 to 5 min;
Add the other half of the garlic;
Cover and simmer for 4 to 5 min;
Add coconut cream;
Mix well and simmer;
3RD STEP - FINAL SIMMERING
Simmer for 20 to 30 min;
Right in the middle of final simmering process, add the potatoes;
Add the banana blossoms after soaking it in water;
Add the pineapple chunks;
Conduct taste test; you may add sugar to balance the taste;
Test the potatoes for right softness;
Once potato is soft, then it would be ready to serve.
Serve in a nice bowl with steamed rice.
